My go-to banana bread recipe, plus it's gluten free and has chocolate chips, so what's not to love?!
3 ripe bananas, mashed (about 1 1/4 cups mashed)
1 teaspoon vanilla extract
1/4 cup almond butter (or peanut butter)
3 tablespoons honey
1/2 cup coconut flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup chocolate chips
shredded, unsweetened coconut
Preheat oven to 350˚F and spray a 8x4 inch or 9x5 inch loaf pan with nonstick cooking spray.
In a bowl with an electric mixer, combine bananas, vanilla, almond butter and honey; mix until well combined.
Add in eggs, one at a time and mix on medium speed until combined.
With the mixer on medium-low speed, add in coconut flour, baking soda, baking powder, cinnamon and salt; mix again until just combined. Gently fold in chocolate chips.
Pour batter into prepared pan and sprinkle coconut on top. Bake for 30-40 minutes or until knife inserted into center comes out clean. Remove from oven and cool for 20 minutes then try not to eat the whole loaf yourself ;)
